we have been in the business of making, falling-in-love, searching, learning, eating & obsessing over gelato for the past 22 years and one of our latest chapters/obsessions is stone milling .. in this case stone milling whole roasted california pistachios to coax out the richest, nuttiest, purest pistachio butter possible, which is then blended in with our milk & cream to make our PISTACHIO CALIFORNIA soft serve. it’s a true testament to how much the ingredients and the old school methods matter and how there are no shortcuts or getting any better or even getting close to this flavor, this richness, this balance, this purity, this fucking deliciousness of flavor other than staying true to the old world way of doing this .. stone grinding was the first method to process nuts, grains, seeds, pods, etc and you can’t improve on it. old school-analog-using your hands will forever reign in our kitchen ♾️
