POMEGRANATE graces our menu for a couple of months POMEGRANATE graces our menu for a couple of months a year, always during the holiday season. it is a sorbet and has no milk or cream, allowing the flavor to be as close as possible to eating the crunchy seeds right out of the fruit. we split the pomegranates in half and beat the hell out of them, dislodging the seeds til our kitchen looks like a bloody murder scene. we then mix in a simple syrup and achieve a flavor so pure and so true, only possible by using the whole fruit. subtle, sweet & slightly nutty, it’s one of the most elegant sorbets we make all year long.
