This summer we played with the Champagne Mango, which comes up from Mexico for several months during the summer. They are super creamy, a bit buttery and delicately sweet, and contain much less fiber than the larger mangos, which also come up from Mexico. As we spun mango this summer, we took lots of photos, getting ready for the website; actually our friend, Josh took all the photos, and he got some beautiful shots, with lovely compositions.
